Sometimes zucchini gets a bad rap! We don’t believe in such a thing around here. We love the stuff when it is in season and while it is good in items like bread and chocolate cake. We also love it as part of our meals. Here is a simple recipe for sauteed summer squash.
Ingredients:
Summer squash/zucchini
Garlic
Olive Oil
Balsamic
Seasoning
Dice or slice summer squash into bite size pieces. Heat oil in a large cast iron (or any other) skillet until shimmering, add in garlic. When you can smell the garlic add in your summer squash. At this point we want some carmelization so give it a good toss to coat with the olive oil and garlic and then let it sit on the heat for a bit. When you start to get some browning give them another good toss/stir in the pan. Don’t forget to season the squash at some point with salt and pepper, if you have some other favorite seasonings you can use those too. When a piece of squash passes your taste test for doneness add in a splash of the balsamic and toss the squash to coat them. Serve immediately and enjoy!
